Today, we’re going to try something a little different…a new segment I like to call “Food for Thought.” I will be taking this time to show you some recipes that taste like they should be soooooooooo much worse for you than they are, and show you how to make them even better!

check that out…oooh baby…you should have to be at least 18 to look at that picture…and you know what? This is one of the tastiest recipes i’ve ever made. It is so good and so easy to make that we had it 2 nights in a row! Let’s get started…
All you need to make this fabulous dish (minus the dipping sauce, but we’ll get to that later) is 4 ingredients:
1 lb chicken breast
1 package bacon
2/3c packed brown sugar
2T crushed up red pepper flakes
Go ahead and set your oven to 350…you will probably be done prepping these babies before it even heats up!
First off, cut your chicken into bite sized chunks. ugh… I hate hate HATE raw chicken…
Next, cut your bacon strips in half long-ways (hotdog style, not hamburger style if anyone remembers elementary school terms)
Please excuse the low quality bacon picture…I was trying to ward off my kitten while taking it. Screw Chzburgers…she just wants BACON!
now, the grossest part…wrap a strip of bacon around a piece of chicken, and secure it with a toothpick. repeat until all chunks are wrapped and happy
Now the fun part! plop your nicely wrapped little meat-present into your mixed-together sugar and chili…
…and swirl your bowl around until the whole thing is nicely coated.
plop it down on a broiler pan (these things produce a lot of juices…) and move on to the next one until you have a nice happy tray of surprisingly mouthwatering raw meat.
let these rest for a little while (5-10 minutes), and you will start to notice that the sugar is drawing out the tasty tasty juices…now it is time to pop them in the oven!
Bake 35-45 minutes, depending on how crispy you like your bacon, and let cool for about 5 minutes before you eat them. This is the hardest part. your house will smell amazing while you wait.
I chose to keep myself busy while they baked by making a sauce. I mixed about 2/3 c of failed wine jelly (I used this recipe, but mine didn’t set up quite thick enough…too runny for jelly, but perfect for sauce!) with about 1/4 cup of the blackberry vinegar I made this year, and added in 2 of those mango-habanero sauce packs they have at Dominoes pizza (I really need to figure out how to make this from scratch…we’re addicted to it!), a sprinkle of garlic powder, some red pepper flakes and fresh ground pepper…mix it up and BLAMMO! Best sauce ever! I made extra last night so we would have some left and it is all gone…I suspect ang may have drank it after I went to bed because it is just that good!
Now, you may be thinking to yourself, “hey! this sounds completely horrible for you! what is this?!”
HAha! but not so, my friends!
The sodium is a little high, and all the usual things you would expect with bacon, but no where near as bad as you were thinking, huh? 🙂
the nice thing about making things with bacon, is that it is so easy to replace with turkey bacon.
The way I look at it, the turkey bacon only cut your cholesterol by 7 mg, and your sodium by about 220 mg, while nearly cutting your protein in Half…so I chose to use the regular bacon, but if I start making this as regularly as I suspect I will, I plan on making the switch to turkey bacon. It can be so easy to improve your life while keeping the foods you love in your diet, you just need to figure out what things you can replace with healthier options. Try using tofu instead of chicken. Fake-on instead of Bacon. You’ll be surprised what a difference you can make without sacrificing flavor!
